The CV example is a great one - no one really values what level of work goes into the doc itself, but we all recognize the value/necessity of having one done. I agree there are a LOT of these out there that will, in totality, make a lot of our work more efficient in ways everyone can appreciate
I like this because it sidesteps the issue of whether AI is taking jobs. It can increase productivity without taking jobs, just by letting us do stuff we wouldn't have done otherwise.
Yes I think that is right. Hopefully that is what happens, and hopefully the people who don’t want to use AI to automate their main job can still use it to reduce the burden of the less important tasks

Other related things I would add to this list: write first draft of cover letter to editors when submitting a paper, write social media threads when I publish a paper, build regression tables in the SI for models that I present only point estimates in the main manuscript, and updating my website when I add something new on my cv.

Thanks! I agree, those are good use cases. And the productivity gains are real, even if AI just reduces the time spent on these small things
